With the opening of Palace Café in 1991, Dickie Brennan & Company was established by Dickie and fellow Owners and Managing Partners Steve Pettus and sister Lauren Brennan Brower to foster and nurture the rich history of New Orleans cuisine. A trained chef and third generation New Orleans restaurateur, Dickie grew up under the tutelage of Chef Paul Prudhomme and helped New Orleans institution Commander’s Palace lead the American Regional Cuisine movement by introducing the world to Cajun and Creole cooking. Dickie, Steve, and Lauren have built upon the culinary and hospitality fundamentals the Brennan family has personified for 4 generations. 

Dickie Brennan’s Family of Restaurants found in New Orleans’ French Quarter are Palace Café, Dickie Brennan’s Steakhouse, Bourbon House, and Tableau. In 2019, Dickie Brennan & Company expanded citywide with Acorn Café adjacent to the Louisiana Children’s Museum, while in 2020, the company’s “Next Generation” of family chefs opened The Commissary Kitchen + Market in the Lower Garden District.
