NEW ORLEANS (press release) – Bywater American Bistro (BABs) – Bywater’s go-to spot for exceptional contemporary cuisine – will welcome lauded Senegalese Chef Serigne Mbaye of local pop-up Dakar NOLA on Wednesday, Nov. 18, from 5:30 p.m. to 9 p.m. Mbaye, known for his Creole-meets-Senegalese cuisine, will join BABs Chef/Owner Nina Compton in the kitchen for an unforgettable collaboration.
For one night only, the talented toque will join forces with award-winning Chef Nina Compton to create a multi-course menu that showcases the bounty of Africa’s indigenous ingredients, as well as pay homage to the culinary contributions rooted in Afro-Caribbean cuisine. Priced at $75 per person (tax and gratuity not included) the six-course tasting menu includes a welcome cocktail, with an optional cocktail pairing for $35. Offerings include soupa konji, jollof rice, green fig dumplings, and cassava pudding with rum caramel, among others.
Chef Mbaye has worked in the kitchens of Commander’s Palace, L’Atelier de Joel Robuchon in New York, and Atelier Crenn in San Francisco. At Dakar NOLA, Mbaye cooks his favorite Senegalese dishes using local ingredients and Gulf seafood.
