In New Orleans, food and drink are top priorities. Celebrations, events and family functions revolve around the bar and the nourishment. The same holds true for New Orleans weddings. In that spirit, we have teamed up with Chef Bryan Clark, executive chef for Joel Catering and Events, to bring readers delicious recipes and food ideas to serve up at your reception, engagement party or just a date night in.
This week, Clark gives us the recipe for boudin sliders with chipotle aioli.
“Sliders are becoming more and more popular,” said Clark. “And this recipe is nice turn on that with locally-sourced boudin and a flavor that your guests will love.”
Clark suggests these sliders would work best in a cocktail party setting, as an hors d’oeuvre, because their size allows for guests to enjoy the food while not having to put down their drink, which is essential. If you want to take it a step up, Clark suggests enlarging the portion size for a New Orleans-themed backyard cookout or barbecue-themed couple’s shower.
Boudin Sliders with Chipotle Aioli
Before getting started, here are some suggestions from Clark:
Consider this a quick turnaround recipe, but you could make the entire recipe from scratch with homemade brioche buns and boudin sausage. Making boudin can be very time consuming and getting the right spice combination and consistency can be difficult. It’s easier to go with a locally-sourced purveyor like Creole Country, or your own favorite boudin.
Brioche rolls are pretty straightforward to bake, and here’s a New York Times recipe that will work well. If you would rather buy them ahead of time instead, local supermarkets such as Rouses and Whole Foods offer a good roll. You could also take your own turn on the boudin slider by putting it on an onion roll or slices of focaccia bread.
Just like a standard hamburger, you can add whatever toppings you’d like such as roasted tomato slices or your favorite coleslaw.
4 lbs. boudin
24 brioche rolls
roasted tomatoes (optional)
cole slaw (optional)
Spicy Chipotle Aioli (Easy)
½ cup mayonnaise
3 tablespoons lime juice (fresh squeezed)
1 large clove garlic (minced)
1 to 1 ½ tablespoons chipotle peppers in adobo sauce (minced)
1 pinch of salt (or to taste)
Mix mayonnaise, lime juice, chipotle peppers (minced), garlic (minced), and salt together in a bowl. Place in refrigerator until chilled.
- Preheat the oven to 350 degrees
- Slice the boudin out of its casing and put it into a bowl
- Form 24 small slider size patties (about 3 oz. each)
- Working in batches of 6-8 patties, put the patties in an oiled skillet and sear each side.
- Place all of the patties on an aluminum tray and bake in the oven for 3-5 minutes. Boudin has been previously cooked so you’re just making sure the patties are heated through for your sliders.
- Take the patties out and begin assembling the sliders:
- Put a little aioli on each side of the bun
- Add the patty
- Top with any extras like cole slaw or roasted tomato slices
- Serve warm
