NEW ORLEANS (press release) – Chefs Donald Link and Stephen Stryjewski have announced that orders can now be placed for Thanksgiving catering at Cochon Butcher and La Boulangerie. Each year the award-winning culinary team of the Link Restaurant Group creates a catering menu for a Thanksgiving holiday feast to be served at home. In addition to turkeys, whole hogs, sides, pies, and all the holiday fixins’ will be available.
Cochon Butcher’s turkeys are free-range, air-chilled, and prepared in a 24-hour brine by in-house butchers. Offered this year are brined with or without boudin stuffing ready to cook at home, and new this year fully cooked and smoked in-house. “Our boudin stuffed turkey is an amazing south Louisiana treat,” said Stephen Stryjewski. “On the surface it is simply a turkey and rice dressing rolled into one dish, but it is so much more. We start with a Bell & Evans free range turkey and bone it out to the thigh bones. By leaving the legs intact it maintains the whole bird appearance after it is trussed. Then we stuff it with our boudin, which when you think about it, is really just a form of rice dressing and then we tie it back up so that it looks like your traditional whole turkey bird.”
All the classic Southern Thanksgiving items are available on the catering menu. Meats, in addition to turkey, include marinated prime rib, jambalaya stuffed whole chicken, and whole hogs. All meats, aside from the smoked turkey, are served raw and ready to cook at home. Fresh sausages, Cajun meats and sausages, and the House Charcuterie Box are also available. The charcuterie box includes assorted house cured meats for four to 35 people. Sides, soups and gravy & bread are available in both small (feeds 4 – 6 people) or large (feeds 10 – 12 people) sizes and include: shrimp & eggplant dressing, broccoli & rice casserole, mac ’n’ cheese, smothered greens, coleslaw, traditional homemade gravy, cranberry satsuma sauce, chicken & sausage gumbo with rice, and Cochon’s par baked dinner rolls. Desserts include apple, pecan, and pumpkin pie; chocolate, red velvet, and carrot cakes; assorted cookies; and boozy Butcher eggnog.
