Dickie Brennan is the owner of Tableau, a new restaurant located in the historic Le Petit Théâtre du Vieux Carré. Brennan has four restaurants; the Palace Cafe, which is 20 years old, is the oldest. According to Brennan, the only reason he opened a new restaurant was because of Le Petit Théâtre. The restaurant occupies an otherwise unused area of the building where Le Petit is located, thus helping the oldest community theatre in the country keep its doors open.
For this podcast, Brennan shares a little about the history of the building, including the fact that the last Spanish governor of Louisiana lived there. Brennan also explains why he thinks so many people eat out so frequently. He describes what he thinks is the difference between a good restaurant and a great restaurant and discusses his inspiration for the food he serves at Tableau.
