It’s the fruit of choice for teachers, Snow White and of course Adam and Eve. Whether red and sweet or green and tart, apples offer flavor in more ways than one.
Tossed with cinnamon and sugar and then baked in a flaky crust, they become an American classic. Eaten straight from the orchard, they’re an instant heart-healthy snack. And to date, there are thousands of apple recipes that run the gamut from traditional to unexpected. From September through November, celebrate this versatile fruit and give it the recognition it’s due. The U.S. Apple Association expanded National Apple Week to an entire three-month period, proving that no matter how you “slice” it, America loves an apple –– an apple a day, to be exact.
Apple-Cheddar Pizza with Toasted Pecans
1 12-ounce can refrigerated, ready-made pizza dough
Vegetable oil cooking spray
3 large apples, thinly sliced
1 cup apple juice
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
2 tablespoons honey
1/4 cup chopped toasted pecans
1 cup grated white cheddar cheese
R Preheat the oven to 425 degrees. Lightly coat a 14-inch pizza pan with cooking spray. Press the dough into the pizza pan. Cook the apples in the apple juice until they’re tender. Drain off the juice, and reserve it. Place the apple slices on the dough. Dissolve the cornstarch in the reserved apple juice, add the cinnamon and honey, and cook this mixture over medium heat until it’s clear. Spread the sauce over the apples, and sprinkle the pecans on top. Top the pizza with cheese, and bake it for 15 to 20 minutes. Serves 8
