Peruvian food fits more snugly amongst the cultural mosaic of New Orleans than some might realize, making it the perfect home for Veho Hospitality Group’s newest author-driven restaurant concept scheduled to open in Fall 2026, INKA. Named for the Andean Sun God whose rule over the Inca and Inti Empires was one of sustainability and vibrancy in the shadow of Peru’s famous Rainbow Mountains, INKA brings contemporary Limeño cooking — the cuisine of Lima, Peru’s coastal capital- direct to Louisiana as the first restaurant of its kind in the state. Offering a cross-pollination of flavors and inspirations, where Indigenous Andean, Spanish, Afro-Peruvian, Chinese, and Japanese influences have merged over generations into a single, unified identity, INKA is a space meant for exploration, where citrus-cured ceviche and tiradito, wood-fired anticuchos, pollo a la brasa, and chifa-influenced classics like lomo saltado come together under one roof. As Veho Hospitality Group proclaims: Lima is our language. Peru is our identity. New Orleans is our home.

“Our ceviche uses Gulf redfish and blue crab, but the technique, the acid, the ají that’s Lima,” says Executive Chef Johan Pereira.
INKA, occupying a ground-floor retail space at 930 Poydras St., a 21-story residential tower in the Central Business District, aims to expand upon the success of Veho Hospitality’s other restaurant concept in the area: Taquerias Carnalito. By bringing a familiar sense of style that creates a one-of-one experience for guests, Chef Pereira and his team mean to deliver something far more than a night out in New Orleans. At INKA, the goal is to transport guests from the Gulf South into the lush spirit of Peru’s cuisine and people, enveloping them in the spice and spirit of the Peruvian people. Named the World Travel Awards’ “World’s Leading Culinary Destination” for 13 consecutive years (2012–2025), Peru is a unique ecosystem of aromatics and ingredients that are foundational to INKA’s menu. By focusing on the three great geographic territories of Peru: the Costa, the Sierra, and the Selva, Chef Pereira crafts a selection that speaks beyond taste to the sense memory of an entire culture, of recipes passed down through generations of Lima’s urban culinary language.
