Mike Doyle is owner and chef at Maurepas Foods. Maurepas Foods is a popular restaurant located in New Orleans' Bywater neighborhood. Maurepas Foods is Doyle's first restaurant; he chose the Bywater area because he felt the neighborhood was under-served. In this podcast, Doyle explains what the Bywater is and describes how the area has changed and developed since he opened Maurepas Foods in 2012. When he developed his menu, Doyle took a unique approach. On the one hand, Maurepas Foods features some unusual, innovative dishes. On the other hand, the restaurant offers a few very old traditional dishes, such as liver and onions, that are New Orleans' favorites, but rarely appear on menus anymore.
