Chef John Besh is chef and owner of August Restaurant – among several others – in New Orleans. Besh describes how he began cooking, and explains why cooking appealed to him at a young age. He recalls his early cooking experiences and training in New Orleans and at the Culinary Institute of America. He also touches on food traditions in New Orleans and shares his thoughts about what recipes should not be tampered with.
