Oysters poached in white wine is classic yet sophisticated New Orleans style appetizer that is surprisingly simple to prepare.

Ingredients

  • 1/2 cup 1/2 white wine

  • 2 teaspoons 2 minced shallots

  • 1 teaspoon 1 butter

  • 12 12 shucked oysters

  • 1 teaspoon 1 minced chives

  • salt and pepper to taste

Directions

  • Warm 4 small ramekins and divide the butter among them.
  • Combine wine and shallots in a sauce pan over high heat.
  • Boil until wine is reduced by half.
  • When wine has reduced, add oysters and poach briefly – just until the edges curl.
  • Transfer 3 oysters and some of the poaching liquid to each ramekin.
  • Season with salt and pepper and garnish with minced chives

Notes

  • The shallots called for in this recipe are the small brown-skinned shallots, not green onions, which are sometimes called shallots in Louisiana.
  • While the amount of butter in this recipe is only one-quarter teaspoon per serving, it makes a world of difference in the finished dish.
  • Consider getting your fresh oysters from P&J Oyster Company in the French Quarter.
