Phat Vu is the owner of one of New Orleans' newest Vietnamese restaurants, Ba Chi Canteen. Even though New Orleans has not traditionally had an abundance of Vietnamese restaurants, locals' growing appreciation for this fresh, healthy cuisine has resulted in several new Vietnamese restaurants in the city. Ba Chi Canteen, located at 7900 Maple St. in the University area, is one of the latest to open. Vu explains why he thinks more and more New Orleanians are attracted to this tasty Asian cooking.
