Sean O'Mahony is the owner of Breads on Oak. In the 1950s and '60s, Oak Street was the main shopping street for the residents who lived in the Carrollton area of New Orleans. Today, Breads on Oak and other businesses have helped rejuvenate the street. Breads on Oak uses traditional old-world techniques to create some of the best artisan breads in New Orleans. In this podcast, O'Mahony describes the classic techniques that bread bakers have used for centuries to create honest, authentic loaves from simple ingredients. He explains what makes a bread an artisan bread and tells us about the method of capturing wild yeast from the air, using grapes or potatoes.
