NEW ORLEANS (press release) – Samuel Peery has been named chef de cuisine of Restaurant R’evolution, the iconic fine-dining establishment located at 777 Bienville St., inside Royal Sonesta New Orleans hotel in the heart of the French Quarter. As chef de cuisine, he will oversee menu execution and kitchen operations, while developing seasonal offerings and specialty dishes.
“I am excited to welcome Samuel Peery to Restaurant R’evolution as our chef de cuisine,” said Chef John Folse, managing partner and executive chef. “He is very talented and has a passion for Southern food. Chef Peery’s energy is a great fit for us and I know his experience will add to our already talented team.”
Peery is a highly trained chef with over 10 years of professional kitchen management and fine dining experience, specializing in Modern American, Italian, French and Southern cuisines. He holds Culinary Arts degrees from both Cook Street School of Fine Cooking as well as an Advanced Culinary Degree from the Accademia Italiana Della Cucina in Piedmont, Italy. Peery also earned a Bachelor of Science in Marketing and Communications from East Tennessee State University.

Most recently, Peery worked as the Executive Sous Chef at Martis Camp, an exclusive resort community in Northern California. Peery oversaw culinary operations for six restaurant outlets and curated hyper seasonal menus that focused on the finest bounty in California.

In addition to his culinary skills, Peery will use his expertise as a certified Sommelier to showcase Restaurant R’evolution’s world-class wine cellar, creating custom food and wine pairings for groups and private events.
In his role as chef de cuisine, Peery successfully executed the reopening of Restaurant R’evolution on Thursday, October 22. Restaurant R’evolution is now open for dinner reservations on Thursdays and Sundays from 5 p.m. to 9 p.m. and with extended dining on Fridays and Saturdays from 5 p.m. to 10 p.m. Bar R’evolution, featuring chef-driven seasonal cocktails, is open for Happy Hour Thursday through Sunday 5 p.m. – 6 p.m.
