NEW ORLEANS (press release) – Chef Donald Link and Chef de Cuisine David Rouse of the award-winning Herbsaint Restaurant are pleased to announce reservations are now being accepted for New Year’s Eve. Advanced reservations are required for limited seatings at 5:30 p.m., 6 p.m., 6:30 p.m., 8:30 p.m. and 9:00 p.m.
Chefs Link and Rouse has crafted a menu that features various seafood, each prepared with a different cooking style, along with an unusual cut of beef, and a seasonal dessert. “It’s been a rough year all around and we’re looking forward to ending this year with an amazing menu from Chef David, showcasing some of his new dishes based in classic and contemporary French cuisine he picked up on his travels in Europe last year. I love the combinations of these classics with some new dishes that I also experienced on my last trip to Paris in addition to the spinalis steak, my all time favorite. It’s the top cut portion of the ribeye only, the absolute best steak that exists.”
The menu for the evening is as follows:

Salsa Matcha, Salmon Roe and Cilantro
Grilled Langoustine
Black Truffle, Ponzu and Petite Herbs
Sautéed Skate Wing
Shaved Matsutake Mushroom, Brown Butter Buerre Rouge
Pan Roasted Spinalis
Foie Gras, Pommes Purée, Bordelaise
Meyer Lemon Cheesecake
The six-course dinner is $150 per person, plus tax and gratuity.
