The lazy days of summer are here once again. As the temperature rises, the outdoor activities seem to mount –– especially for Dad. On June 15, thank him for the tiring hours of yardwork he has tackled or for his perfect attendance record at this year’s Little League games. There is no better way to show your appreciation than by giving him the day off and starting it with breakfast in bed. A simple French omelet will give him a reason for rising, and you can toss in a savory filling for an added perk.
Whether he’s a sweet or a salty kind of guy, one thing is for sure: He’ll enjoy every last bite. And room service just isn’t complete without a tall glass of freshly squeezed orange juice or a cold and creamy iced coffee.
2 large eggs
2 tablespoons milk
Pinch of kosher salt
Freshly ground black pepper
1 tablespoon unsalted butter
Combine the eggs, milk, salt and pepper in a medium bowl, and mix well with a fork or whisk.
Heat a small omelet pan or nonstick skillet over medium-high heat, adding butter when the pan is warm. Swirl the pan to distribute the butter as it melts. When the butter stops sizzling and the foam subsides, add the egg mixture.
Let the egg mixture heat slightly, and then stir vigorously with a heat-proof spatula. Make sure to stir in the sides of the egg mixture to ensure the omelet cooks evenly. Once the eggs are set, tap the pan gently on the burner to release the omelet from the pan. If the omelet sticks to the sides or bottom of the pan, loosen it with a heat-proof spatula.
Hold the pan at a 45-degree angle to the stove, and carefully fold the omelet. Cook until the desired degree of doneness, lifting the pan or reducing the heat to prevent browning.
Transfer to a warm plate and serve.
Once the eggs are set, you can add your choice of fillings before folding.
2 tablespoons grated cheese, such as Gruyère, goat cheese, cheddar, Gouda or feta, combined with 1 tablespoon currant jelly
2 to 3 tablespoons sliced apples, pears or strawberries, alone or with a complementary cheese
1 to 2 tablespoons finely chopped fresh herbs such
as parsley, basil, dill, tarragon, chives, thyme or chervil
1 to 2 tablespoons chopped smoked salmon
combined with 1 tablespoon sour cream, cream cheese
or crème fraîche
