The Elysian Bar Welcomes Pastry Chef Bronwen Wyatt

NEW ORLEANS (press release) — The Elysian Bar is pleased to welcome Pastry Chef Bronwen Wyatt to the Bacchanal culinary team. After a two year stint in San Francisco, Wyatt returned to New Orleans in 2009, where she has overseen the pastry programs at James Beard Award-winning restaurants La Petite Grocery, Shaya and Willa Jean. In her new role, Wyatt is pleased to spearhead the development of the pastry and dessert programs at Bacchanal and The Elysian Bar. Wyatt has been named one of the Top Five Pastry Chefs to Watch by The Times Picayune was nominated for Food & Wine magazine’s People’s Best New Pastry Chef award and was the first pastry chef deemed as  a ‘Chef to Watch’ by Louisiana Cookin’ Magazine.

Chef Bronwen deftly blends her signature focus on simple, seasonal food with the newly added pastry creations. Starting this week, The Elysian Bar will showcase a wider variety of breakfast pastries, cookies and breads, as well as a fruit-forward dessert menu. Hotel guests and Marigny neighbors can look forward to a plethora of sweet options, from chocolate and rye cookies (made with Bellegarde, rye flour) to blueberry rose muffins. For those who prefer savory goods, seasonal scones like ‘everything bagel and gouda’ or vegan focaccia with garden herbs and vegetables, are delicious selections to choose from and enjoy.

Wyatt is committed to featuring unusual, local ingredients, ‘The fresh milled, whole grain flours we source from Bellegarde add a quirky dimension to traditional breakfast desserts. I think guests will be pleased to taste items like the sweet potato, buckwheat, and labneh muffin. That item marries southern flavors with middle eastern twist. The buckwheat flour from Bellegarde lends a nutty undertone and adds distinct moisture.’
